Here’s a hearty, cheesy, and family-friendly Zucchini Hamburger Casserole recipe — a great way to use fresh zucchini and ground beef for a low-carb, comforting dinner. It’s perfect for meal prep and even picky eaters will love it!


🥘 Zucchini Hamburger Casserole

Savory. Cheesy. Perfect balance of veggies, beef, and creamy sauce.


✅ Ingredients (Serves 6–8)

🍖 Main Ingredients:

  • 1 lb ground beef

  • 1 small onion, diced

  • 2–3 medium zucchini, sliced thin or chopped

  • 1 can (10.5 oz) cream of mushroom or cream of cheddar soup

  • ½ cup sour cream or Greek yogurt

  • 1½ cups shredded cheese (cheddar, mozzarella, or blend)

  • 1 tsp garlic powder

  • 1 tsp Italian seasoning (or oregano/basil mix)

  • Salt & pepper to taste

  • Optional: ½ cup breadcrumbs or crushed crackers for topping

  • Optional: 1 tbsp butter (if using topping)


🔥 Instructions

1. Preheat Oven

  • Preheat to 375°F (190°C).

  • Grease a 9×13-inch baking dish.


2. Cook Beef & Onions

  • In a skillet over medium heat, cook ground beef and diced onion until browned.

  • Drain excess grease.

  • Season with garlic powder, Italian seasoning, salt, and pepper.


3. Prepare Zucchini

  • Slice zucchini into thin rounds or half-moons.

  • Optional: Lightly sauté zucchini for 2–3 minutes to reduce moisture, or sprinkle with salt and pat dry after 10 minutes.


4. Mix the Filling

  • In a large bowl, combine:

    • Cooked beef mixture

    • Zucchini

    • Cream of mushroom soup

    • Sour cream

    • 1 cup shredded cheese

  • Mix until everything is well coated.


5. Assemble & Bake

  • Pour mixture into prepared baking dish.

  • Top with remaining ½ cup cheese.

  • Optional: Mix breadcrumbs/crackers with melted butter and sprinkle on top.

  • Bake for 25–30 minutes, until bubbly and cheese is golden.


6. Cool & Serve

  • Let sit 5–10 minutes before serving.

  • Garnish with parsley or red pepper flakes if desired.


🧊 Storage & Reheating

  • Fridge: Store in airtight container for up to 4 days.

  • Freezer: Freeze in portions or whole dish for up to 2 months.

  • Reheat: Oven at 350°F or microwave until heated through.


🔄 Variations

  • Use ground turkey or sausage instead of beef

  • Add diced tomatoes, corn, or bell peppers

  • Make it spicy with jalapeños or chili flakes

  • Swap zucchini for yellow squash or a mix of both

  • Make it keto by skipping the breadcrumb topping
