traditional German Potato Salad

Here’s a Traditional German Potato Salad (Kartoffelsalat) recipe — warm, tangy, savory, and made without mayo. It’s typically served warm and features a vinegar-mustard dressing, crisp bacon, and tender potatoes. A beloved side dish at German cookouts, Oktoberfest celebrations, or with schnitzel!


🇩🇪 Traditional German Potato Salad (Warm Bacon Vinaigrette Style)

🥔 Ingredients:

  • 2 lbs (900g) waxy potatoes (like red, Yukon Gold, or fingerling)

  • 6 slices thick-cut bacon, chopped

  • ½ medium yellow onion, finely diced

  • ⅓ cup apple cider vinegar (or white vinegar)

  • 1 tbsp Dijon mustard (or German-style mustard)

  • 1 tsp sugar (optional, to balance acidity)

  • ½ tsp salt (adjust to taste)

  • ½ tsp black pepper

  • ⅓ cup chicken broth (optional, but traditional)

  • 2 tbsp chopped fresh parsley (for garnish)


🔥 Instructions:

1. Boil the Potatoes:

  • Place whole, unpeeled potatoes in a pot of salted water.

  • Bring to a boil and cook until fork-tender, about 15–20 minutes.

  • Drain and let cool slightly.

  • Peel (optional) and slice into ¼-inch rounds while still warm.


2. Cook the Bacon:

  • In a skillet over medium heat, cook bacon until crispy.

  • Remove bacon with a slotted spoon and set aside.

  • Leave about 2–3 tbsp of bacon grease in the pan.


3. Make the Warm Dressing:

  • In the same pan with bacon grease, sauté the diced onion until soft (about 2–3 minutes).

  • Stir in vinegar, mustard, sugar, salt, and pepper.

  • Add chicken broth and bring to a gentle simmer for 1–2 minutes.


4. Assemble the Salad:

  • In a large bowl, combine warm potato slices, bacon, and the hot dressing.

  • Gently toss to coat — the warm potatoes will absorb the flavors beautifully.


5. Garnish & Serve:

  • Sprinkle with chopped fresh parsley.

  • Serve warm or room temperature — not cold!


✅ Tips:

  • Best potatoes: Waxy types hold their shape — avoid starchy russets.

  • Adjust vinegar/mustard to taste — some regions prefer it tangier.

  • Optional add-ins: pickles, celery seed, or chopped green onions.
