Here’s a gourmet twist on a comfort food classic: Sun-Dried Tomato, Spinach, and Ricotta Grilled Cheese. Creamy, tangy, and melty with a crispy golden crust — it’s perfect for lunch, dinner, or a cozy snack.


🧀 Sun-Dried Tomato, Spinach & Ricotta Grilled Cheese

Savory, rich, and packed with Mediterranean flavor.


✅ Ingredients (Makes 2 sandwiches)

  • 4 slices of sourdough, ciabatta, or hearty whole grain bread

  • 4 tbsp ricotta cheese

  • ½ cup shredded mozzarella (or provolone or fontina)

  • ¼ cup sun-dried tomatoes, chopped (in oil, drained)

  • 1 cup fresh spinach, lightly sautéed or steamed

  • 2 tbsp grated Parmesan (optional, for flavor boost)

  • Butter or olive oil, for grilling

  • Optional: pinch of chili flakes or drizzle of balsamic glaze


🔥 Instructions

1. Prep the Spinach

  • In a skillet, quickly sauté the spinach with a touch of olive oil until wilted.

  • Season lightly with salt and pepper. Set aside.

2. Assemble the Sandwich

  • Spread ricotta evenly on two slices of bread.

  • Layer with:

    • A few sun-dried tomato pieces

    • A handful of sautéed spinach

    • Mozzarella (and Parmesan, if using)

  • Top with the other bread slices to form sandwiches.

3. Grill the Sandwich

  • Butter the outside of each slice of bread (or brush with olive oil).

  • Heat a skillet or griddle over medium heat.

  • Grill each sandwich for 3–4 minutes per side, pressing gently with a spatula, until golden brown and cheese is melted.

4. Serve

  • Slice and serve hot — optionally drizzle with balsamic glaze, sprinkle with chili flakes, or dip in tomato soup!


🔄 Variations

  • Add sliced roasted red peppers or artichokes

  • Mix a bit of pesto into the ricotta for herby flavor

  • Use goat cheese instead of ricotta for tangier bite

  • Make it spicy with crushed red pepper or pepper jack
