For the Patty Melts:

  • 1 lb ground beef (80/20 is best)

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1 large yellow onion, thinly sliced

  • 1 tbsp butter (for onions)

  • 8 slices rye bread, sourdough, or Texas toast

  • 8 slices Swiss or American cheese

  • 2 tbsp butter (for toasting bread)

  • Pinch of garlic powder or onion powder for seasoning

Mix together:

  • 1/2 cup mayonnaise

  • 2 tbsp ketchup

  • 1 tbsp sweet pickle relish

  • 1/2 tsp onion powder

Chill for 10 minutes while you cook.

For each sandwich:

  1. Spread secret sauce on the inside of both bread slices.

  2. Layer:

    • 1 slice of bread (sauce side up)

    • 1 slice of cheese

    • 1 beef patty

    • A scoop of caramelized onions

    • Another slice of cheese

    • Top slice of bread (sauce side down)
