  • 2 tbsp butter (or olive oil)

  • 8 oz mushrooms, sliced (white, cremini, or mixed)

  • 1 small shallot or Β½ small onion, finely chopped

  • 2 cloves garlic, minced

  • Β½ cup chicken or vegetable broth (or white wine)

  • ΒΎ cup heavy cream (or half-and-half)

  • 1 tsp Dijon mustard (optional, for depth)

  • 1 tsp fresh thyme or Β½ tsp dried thyme

  • Salt & pepper, to taste

  • Optional: grated Parmesan, chopped parsley, or a splash of lemon juice for finish

πŸ”Ή 1. SautΓ© Mushrooms

  • In a skillet over medium heat, melt butter.

  • Add mushrooms and cook for 6–8 minutes, until browned and softened.

  • Add shallot/onion and cook for another 2–3 minutes.

  • Stir in garlic and cook for 30 seconds.

  • Pour in broth (or wine), scraping up any bits from the pan. Let it reduce by half (about 3–5 minutes).

  • Stir in cream, Dijon mustard, thyme, and a pinch of salt and pepper.

  • Simmer gently for 5–7 minutes, stirring occasionally, until thickened.

  • Optional: Stir in grated Parmesan or finish with chopped parsley or lemon juice.
