Here’s a comforting and flavorful twist on a classic: Melt-in-Your-Mouth Garlic Parmesan Chicken Meatloaf — juicy, tender, cheesy, and packed with garlic goodness. It’s lighter than beef meatloaf but just as satisfying!
🍗 Melt-in-Your-Mouth Garlic Parmesan Chicken Meatloaf
Ingredients:
-
1 ½ lbs ground chicken (or turkey)
-
3/4 cup breadcrumbs (panko or regular)
-
1/2 cup grated Parmesan cheese
-
2–3 cloves garlic, minced
-
1 egg
-
1/4 cup milk
-
1 tbsp Italian seasoning (or mix of oregano, basil, thyme)
-
1 tsp onion powder
-
Salt and pepper, to taste
-
1/4 cup chopped fresh parsley (or 1 tbsp dried)
-
Optional: 1/2 cup shredded mozzarella (for the center or topping)
Garlic Parmesan Topping (optional but amazing):
-
2 tbsp melted butter
-
2 cloves garlic, minced
-
2 tbsp grated Parmesan
-
1 tbsp chopped parsley
Instructions:
-
Preheat oven to 375°F (190°C). Line a baking sheet with parchment or lightly grease a loaf pan.
-
Mix the meatloaf:
In a large bowl, combine ground chicken, breadcrumbs, Parmesan, garlic, egg, milk, herbs, onion powder, salt, pepper, and parsley. Mix just until combined — don’t overwork it. -
Shape and stuff (optional):
Shape into a loaf on the baking sheet or press into a loaf pan. For extra deliciousness, you can stuff the center with mozzarella cheese. -
Bake:
Bake for 40–50 minutes, or until internal temp reaches 165°F (74°C). If it starts to brown too much on top, cover loosely with foil during the last 15 minutes. -
Add the topping (optional):
In the last 5 minutes of baking, mix melted butter, garlic, Parmesan, and parsley, and brush over the top of the meatloaf. Broil for 1–2 minutes for a golden crust. -
Rest and serve:
Let rest for 5–10 minutes before slicing. Serve with mashed potatoes, roasted veggies, or a light green salad.
💡 Tips:
-
Want it extra moist? Add 2 tbsp sour cream or Greek yogurt to the mix.
-
Prefer spice? Add a pinch of red pepper flakes.
-
Gluten-free? Use gluten-free breadcrumbs or crushed GF crackers.
