Ingredients:

1 lb ground beef

1 small onion, chopped (optional, can omit for stricter keto)

2–3 cloves garlic, minced

1/2 tsp black pepper

1/2 tsp paprika or Italian seasoning (optional)

1 small head cauliflower, cut into small florets (or use frozen cauliflower rice – about 4 cups)

1/2 cup sour cream or cream cheese (softened)

1/2 cup heavy cream

1 1/2 cups shredded cheddar cheese (divided)

1/4 cup grated Parmesan (optional)

Fresh parsley or green onions for garnish
Instructions:

Preheat oven to 375°F (190°C). Lightly grease a 9×13 casserole dish.

Brown the beef
In a large skillet over medium heat, cook the ground beef (and onion, if using) until browned. Drain excess grease. Add garlic, salt, pepper, and optional spices. Stir to combine. -
Prep the cauliflower
