🍲 Golden Chicken Noodle Soup

Serves: 4–6


🧂 Ingredients:

  • 1 tablespoon olive oil or butter

  • 1 small onion, diced

  • 2–3 cloves garlic, minced

  • 1 tablespoon fresh ginger, grated (or 1 tsp ground)

  • 2 medium carrots, sliced

  • 2 celery stalks, sliced

  • 1 teaspoon ground turmeric

  • 1/2 teaspoon ground cumin (optional for warmth)

  • Salt & pepper to taste

  • 6 cups chicken broth (low sodium preferred)

  • 1–2 cups shredded cooked chicken (rotisserie or poached)

  • 4 oz egg noodles or pasta of choice

  • Juice of 1/2 lemon

  • Optional: fresh herbs (parsley, dill, or cilantro)


🔥 Instructions:

  1. Sauté aromatics:
    In a large pot, heat oil over medium heat.
    Add onion, garlic, and ginger. Sauté until fragrant and translucent — about 3–4 minutes.

  2. Add veggies and spices:
    Stir in carrots and celery.
    Add turmeric, cumin (if using), salt, and pepper. Cook for another 2–3 minutes to bloom the spices.

  3. Add broth and simmer:
    Pour in chicken broth and bring to a gentle boil.
    Reduce heat, cover, and simmer for 10–15 minutes, or until veggies are tender.

  4. Add noodles and chicken:
    Stir in noodles and cook according to package time (usually 6–8 mins).
    Add the cooked chicken during the last few minutes to heat through.

  5. Finish with lemon:
    Add lemon juice to brighten the broth. Taste and adjust salt/pepper.

  6. Serve hot:
    Garnish with fresh parsley or dill for a bright finish.

  • Keeps in the fridge for 3–4 days.

  • If making ahead, cook noodles separately and add when serving to avoid sogginess.
