Here’s a hearty and comforting Chicken Spinach Mushroom Bake that’s creamy, savory, and packed with flavor. It’s an easy, all-in-one oven meal that’s perfect for weeknights, potlucks, or feeding a hungry crowd. 🍗🍄🌿


🍽️ Chicken Spinach Mushroom Bake

🕒 Prep Time: 15–20 minutes

⏱️ Cook Time: 30–35 minutes

🍽️ Serves: 4–6


📝 Ingredients

  • 2–3 cups cooked chicken, shredded or cubed (rotisserie works great!)

  • 1 tbsp olive oil or butter

  • 8 oz fresh mushrooms, sliced

  • 3 cups baby spinach (or 1 box frozen spinach, thawed and drained)

  • 2 cloves garlic, minced

  • 1 small onion, chopped

  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)

  • ½ cup sour cream or Greek yogurt

  • ½ cup shredded mozzarella or Monterey Jack cheese

  • ¼ cup grated Parmesan

  • ½ tsp dried thyme or Italian seasoning

  • Salt & pepper, to taste

  • Optional topping: buttered breadcrumbs or more cheese


👩‍🍳 Instructions

🔹 1. Preheat Oven

  • Preheat to 375°F (190°C). Grease a 9×13-inch baking dish.


🔹 2. Sauté Veggies

  1. Heat oil or butter in a skillet over medium heat.

  2. Add onion and cook 2–3 minutes until soft.

  3. Add mushrooms and cook until browned (about 5–7 minutes).

  4. Stir in garlic and spinach; cook until spinach wilts (or use thawed, squeezed frozen spinach).


🔹 3. Mix the Filling

In a large bowl, combine:

  • Cooked chicken

  • Sautéed mushroom-spinach mixture

  • Cream of mushroom soup

  • Sour cream

  • Mozzarella, Parmesan, and seasonings

Stir until well mixed.


🔹 4. Assemble & Bake

  1. Spread mixture evenly into prepared dish.

  2. Top with more cheese or breadcrumbs, if desired.

  3. Bake for 30–35 minutes, until bubbly and lightly golden.


🔹 5. Serve

  • Serve hot with a side of rice, pasta, or crusty bread.

  • Great with a green salad or roasted vegetables.


🔄 Variations

  • Add cooked pasta or quinoa for a full one-dish meal

  • Use Swiss cheese for a sharper flavor

  • Swap cream of mushroom for a homemade white sauce if you prefer from-scratch
