Caramel Carrot Cake Poke Cake is an insanely moist, flavorful dessert where rich carrot cake meets buttery caramel in every bite — all topped with a fluffy cream cheese whipped topping. It’s easy to make and perfect for holidays, potlucks, or just a serious sweet tooth moment. 🥕🍰✨


🥕 Caramel Carrot Cake Poke Cake

🕒 Prep Time: 15–20 minutes

⏱️ Bake Time: 30–35 minutes

❄️ Chill Time: 1–2 hours

🍽️ Serves: 12–16


📝 Ingredients

For the Cake

  • 1 box carrot cake mix (or use a homemade recipe)

  • Ingredients listed on box (usually eggs, oil, water)

  • Optional: ½ cup crushed pineapple, ½ cup shredded coconut, or ½ cup chopped walnuts

For the Filling

  • 1 (14 oz) can sweetened condensed milk

  • 1 cup caramel sauce (plus extra for drizzling)

For the Topping

  • 1 (8 oz) block cream cheese, softened

  • 1 cup powdered sugar

  • 1 tsp vanilla extract

  • 1 (8 oz) tub Cool Whip or 3 cups whipped cream

  • Optional: chopped pecans or crushed graham crackers for garnish


👩‍🍳 Instructions

🔹 1. Bake the Cake

  1. Preheat oven to 350°F (175°C).

  2. Prepare carrot cake mix according to box instructions.

  3. Pour into a greased 9×13-inch pan and bake for 30–35 minutes or until a toothpick comes out clean.

  4. Remove from oven and let cool 10 minutes.


🔹 2. Poke & Pour

  1. Use the handle of a wooden spoon to poke holes all over the cake, about 1 inch apart.

  2. In a bowl, whisk together sweetened condensed milk and caramel sauce.

  3. Pour mixture slowly over the warm cake, letting it soak into the holes.

  4. Let cool completely, then refrigerate for at least 1–2 hours.


🔹 3. Make the Topping

  1. Beat cream cheese until smooth.

  2. Add powdered sugar and vanilla, and beat again.

  3. Fold in Cool Whip or whipped cream until light and fluffy.

  4. Spread evenly over chilled cake.


🔹 4. Garnish & Serve

  • Drizzle with more caramel

  • Sprinkle with chopped pecans, crushed graham crackers, or toasted coconut

  • Slice and serve cold!


🔁 Variations

  • Use spice cake mix + grated carrots if carrot cake mix isn’t available

  • Swap caramel for butterscotch sauce for a twist

  • Add a layer of crushed pineapple under the whipped topping for tropical vibes
