Here’s a fun and easy recipe for Blueberry Breakfast Quesadillas — sweet, crispy, and filled with gooey blueberries and creamy cheese. They’re perfect for a quick breakfast, brunch, or even a fruity dessert! 💙🌮


💙 Blueberry Breakfast Quesadillas

🕒 Prep Time: 5 minutes

⏱️ Cook Time: 5–7 minutes

🍽️ Serves: 2 (makes 2 quesadillas)


📝 Ingredients

  • 4 small flour tortillas (or 2 large, folded in half)

  • ½ cup fresh or frozen blueberries

  • 4 oz cream cheese, softened

  • 1 tbsp honey or maple syrup (optional, for sweetness)

  • ½ tsp cinnamon (optional)

  • Butter or nonstick spray, for the pan

  • Optional toppings: powdered sugar, yogurt, whipped cream, or extra berries


👩‍🍳 Instructions

🔹 1. Prep the Filling

  • In a small bowl, mix cream cheese, honey/maple syrup, and cinnamon until smooth.

  • Gently fold in the blueberries (don’t overmix or crush them).


🔹 2. Assemble

  • Spread the cream cheese mixture on two tortillas.

  • Top with the remaining tortillas to make quesadillas (like a sandwich).


🔹 3. Cook

  • Heat a nonstick skillet over medium heat and add a little butter.

  • Cook each quesadilla for 2–3 minutes per side, until golden brown and slightly crisp.


🔹 4. Serve

  • Let cool slightly, then cut into wedges.

  • Top with a dusting of powdered sugar, a dollop of yogurt, or a drizzle of honey.


🔁 Variations

  • Add banana slices, strawberries, or a few chocolate chips

  • Swap cream cheese for ricotta or mascarpone

  • Make it savory-sweet with a sprinkle of sea salt
