Vegan turkey roast

Here’s a delicious, hearty, and satisfying recipe for a Vegan Turkey Roast — perfect for holidays, family dinners, or whenever you’re craving a centerpiece-style dish with that nostalgic, savory flavor. This roast is made with seitan (vital wheat gluten) for a meaty texture, and it’s seasoned with classic poultry herbs and spices. You can also add stuffing inside if you want a “turducken” vibe.


🌱 Ultimate Vegan Turkey Roast (Seitan-Based)

🍽️ Serves: 6–8

🕒 Total Time: ~1.5 hours (mostly baking)


🧂 Ingredients:

🧪 Dry Ingredients:

  • 2 cups vital wheat gluten

  • ¼ cup chickpea flour (or all-purpose flour)

  • 2 tbsp nutritional yeast

  • 1½ tsp poultry seasoning (or combo of sage, thyme, rosemary)

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp smoked paprika

  • ½ tsp salt

  • ½ tsp white pepper or black pepper

🌿 Wet Ingredients:

  • ¾ cup vegetable broth

  • ¼ cup soy sauce (or tamari for gluten-free)

  • 2 tbsp olive oil

  • 1 tbsp maple syrup

  • 1 tbsp apple cider vinegar

  • 1 tsp liquid smoke (optional but adds depth)


🧈 Basting Broth (for baking):

  • 2 tbsp olive oil or vegan butter

  • 1 tbsp soy sauce

  • ¼ cup vegetable broth

  • ½ tsp garlic powder

  • ½ tsp thyme or rosemary


🔧 Instructions:

1. Mix Dry Ingredients

In a large bowl, whisk together all dry ingredients.

2. Blend Wet Ingredients

In a blender or bowl, mix all wet ingredients until smooth.

3. Make the Dough

Pour wet into dry and mix until combined. Knead the dough for 2–3 minutes until it’s elastic and firm. Don’t over-knead or it can get rubbery.

🍞 It should look like a firm loaf. Slightly sticky is okay.

4. Shape & Wrap

Form the dough into a log or oval roast shape.
Wrap tightly in parchment paper, then wrap again in foil (or place in a covered baking dish).

5. Bake – First Round

  • Preheat oven to 350°F (175°C)

  • Place wrapped roast on a baking sheet.

  • Bake for 1 hour, flipping halfway.

6. Unwrap & Baste – Final Bake

  • After 1 hour, unwrap the roast.

  • Brush generously with the basting broth.

  • Bake uncovered for another 15–20 minutes, basting once more halfway through.

7. Rest & Slice

Let roast sit for 10 minutes before slicing. This helps the texture firm up and juices redistribute.


🥄 Optional Add-Ins:

  • Stuffing: Flatten dough, add cooled stuffing, roll, and seal edges before baking.

  • Cranberry glaze: Mix cranberry sauce + balsamic + maple, and brush on top in the last 10 minutes of baking.

  • Gluten-Free? Use a tofu-based or chickpea loaf instead — I can give you that version too!
