Easy and tasty Ham and Cheese Egg Cups

Here’s a quick, protein-packed, and super easy Ham and Cheese Egg Cups recipe — perfect for meal prep, on-the-go breakfasts, or low-carb snacks. Just 3 main ingredients, and they’re totally customizable!


🥚 Easy & Tasty Ham and Cheese Egg Cups

🧀 Ingredients (Makes 6–12 cups):

  • 6–12 slices deli ham (thin but sturdy; black forest or honey ham works great)

  • 6 large eggs

  • ½ cup shredded cheese (cheddar, mozzarella, Swiss, or a mix)

  • Salt & pepper, to taste

  • Optional add-ins:

    • Diced bell peppers, spinach, onions, or green onions

    • A pinch of paprika, chili flakes, or everything bagel seasoning


🔥 Instructions:

1. Preheat Oven:

  • Set to 375°F (190°C).

  • Grease a muffin tin or spray with nonstick spray.


2. Assemble Cups:

  • Line each muffin cup with a slice of ham, pressing it down to form a little bowl.

  • Sprinkle in a bit of shredded cheese.

  • Crack 1 egg into each ham cup (or whisk the eggs first if you prefer a scramble-style texture).

  • Season with salt, pepper, and optional toppings.


3. Bake:

  • Bake for 12–15 minutes for runny yolks, or 15–18 minutes for fully cooked eggs.

  • Let cool for 2–3 minutes, then carefully remove from the tin.


🍽️ Serve With:

  • Toast or avocado

  • A side of fruit or greens

  • Hot sauce or a drizzle of hollandaise


🧊 Storage & Reheating:

  • Store in an airtight container in the fridge for up to 5 days.

  • Reheat in microwave for 15–20 seconds.

  • Freezer-friendly: Let cool, then freeze individually. Reheat from frozen in the microwave or oven.


📝 Tips:

  • Want fluffy cups? Whisk all the eggs together first and pour into ham-lined cups.

  • Want bite-size? Use a mini muffin tin and dice the ham.

  • Try with turkey, bacon, or even pastrami for different flavors.
