Cinnamon roll casserole

A Cinnamon Roll Casserole is the ultimate cozy, crowd-pleasing breakfast or brunch dish — gooey, buttery, cinnamony, and drizzled with icing. It tastes like a mashup between French toast and cinnamon rolls, and it’s incredibly easy to make — especially with canned cinnamon rolls.


🍽️ Cinnamon Roll Casserole (with Canned Cinnamon Rolls)

✅ Ingredients (Serves 6–8):

  • 2 cans refrigerated cinnamon rolls (8-count, with icing)

  • 4 large eggs

  • ½ cup milk (or half & half for richer texture)

  • 1 tsp vanilla extract

  • 1–2 tsp ground cinnamon

  • 2 tbsp maple syrup or brown sugar (optional, for added sweetness)

  • Butter or nonstick spray (for greasing)

  • Optional toppings: chopped pecans, cream cheese drizzle, extra maple syrup


🔥 Instructions:

1. Preheat & Prep:

  • Preheat oven to 350°F (175°C).

  • Lightly grease a 9×13” baking dish with butter or nonstick spray.

2. Cut Cinnamon Rolls:

  • Open the cinnamon rolls and set aside the icing packets.

  • Cut each cinnamon roll into quarters (you’ll have 32 small pieces per can).

3. Layer the Casserole:

  • Spread the cut cinnamon roll pieces evenly in the baking dish.

4. Make the Egg Mixture:

  • In a medium bowl, whisk together:

    • Eggs

    • Milk

    • Vanilla

    • Cinnamon

    • Maple syrup or brown sugar (if using)

5. Assemble & Bake:

  • Pour the egg mixture evenly over the cinnamon roll pieces.

  • Gently press down with a spatula so all the pieces soak up the mixture.

  • Bake for 30–35 minutes, or until the top is golden and the center is set (not jiggly).

6. Add Icing:

  • Let cool for 5 minutes.

  • Warm the reserved icing packets slightly (in warm water or microwave for a few seconds).

  • Drizzle over the warm casserole before serving.


✨ Optional Upgrades:

  • Cream Cheese Glaze: Mix 4 oz cream cheese, 1/2 cup powdered sugar, 1 tsp vanilla, and 2 tbsp milk.

  • Add-ins: Sprinkle chopped pecans, raisins, or apples in with the cinnamon rolls.

  • Overnight version: Assemble the night before, refrigerate, and bake in the morning.

  • Serve warm with a side of fresh fruit or crispy bacon.

  • Great for brunch buffets, Christmas morning, or lazy weekend breakfasts.
