Here’s a spot-on, crave-worthy recipe for a Beef Meximelt Cheesy Taco — inspired by the classic Taco Bell favorite! It’s like a soft taco meets a cheesy quesadilla: warm seasoned beef, melty cheese, and pico de gallo all wrapped in a soft tortilla. Simple, fast, and super satisfying.


🌮 Beef Meximelt Cheesy Taco

✅ Ingredients (Makes 6 Meximelts)

For the Beef Filling:

  • 1 lb ground beef

  • 2 tsp taco seasoning (or use 1 packet)

  • ¼ cup water

For the Assembly:

  • 6 soft flour tortillas (6–8 inch size)

  • 1½ cups shredded cheese (Mexican blend, cheddar, or Monterey Jack)

  • ¾ cup pico de gallo (see below or use store-bought)

Optional Toppings:

  • Hot sauce or mild sauce

  • Sour cream

  • Jalapeños

  • Guacamole


🥣 Quick Pico de Gallo (Optional)

  • 2 small Roma tomatoes, finely diced

  • 2 tbsp onion, finely diced

  • 1 tbsp fresh cilantro, chopped

  • ½ tbsp lime juice

  • Pinch of salt


🔥 Instructions

1. Cook the Beef

  • In a skillet over medium heat, brown the ground beef until fully cooked.

  • Drain excess grease.

  • Stir in taco seasoning and water.

  • Simmer for 2–3 minutes until thickened. Set aside.


2. Warm the Tortillas

  • Lightly warm tortillas in a skillet or microwave until soft and pliable.


3. Assemble the Meximelts

  • On each tortilla, add:

    • A layer of shredded cheese

    • A spoonful of the seasoned beef

    • A spoonful of pico de gallo (drain excess juice)


4. Melt It Down

Option 1: Microwave (just like Taco Bell):

  • Fold each tortilla in half or roll it like a burrito.

  • Microwave for 15–20 seconds until cheese melts.

Option 2: Skillet (for a crisped edge):

  • Fold and place seam-side down in a skillet over medium-low heat.

  • Cover with a lid and heat for 2–3 minutes until cheese melts.


5. Serve

  • Serve immediately with your favorite hot sauce or a side of chips & salsa!

  • Add refried beans for a heartier filling

  • Use chicken, ground turkey, or plant-based meat instead of beef

  • Make it spicy with pepper jack and jalapeños

  • Add lettuce after heating for crunch

  • Fridge: Store leftover beef and cheese separately for up to 3 days

  • Freezer: Assemble and freeze before heating. Reheat in the microwave or covered skillet
