Here’s a full recipe for Strawberry Crunch Cheesecake Chunks — a no-bake, sweet, creamy, crunchy dessert inspired by strawberry shortcake ice cream bars and cheesecake bites. Perfect for parties, potlucks, or just a fridge treat!


🍓 Strawberry Crunch Cheesecake Chunks

Creamy cheesecake squares + golden crunch + strawberry flavor — no baking required!


✅ Ingredients

🔹 Cheesecake Base:

  • 16 oz (2 blocks) cream cheese, softened

  • ½ cup powdered sugar

  • 1 tsp vanilla extract

  • 1½ cups cool whip (or whipped cream)

  • 1 cup graham cracker crumbs (for crust)

  • 4 tbsp butter, melted

🔹 Strawberry Crunch Topping:

  • 1 cup Golden Oreos, crushed

  • 1 cup freeze-dried strawberries (or strawberry gelatin mix if you can’t find freeze-dried)

  • 2 tbsp butter, melted


🍰 Instructions

1. Prepare Crust

  • Mix graham cracker crumbs with 4 tbsp melted butter.

  • Press firmly into the bottom of a lined 8×8” or 9×9” pan.

  • Place in freezer while you make the filling.


2. Make Cheesecake Layer

  • In a large bowl, beat cream cheese until smooth.

  • Add powdered sugar and vanilla, mix well.

  • Gently fold in Cool Whip until smooth and fluffy.

  • Spread mixture evenly over chilled crust.


3. Make Strawberry Crunch Topping

  • In a food processor or zip bag, crush:

    • Golden Oreos

    • Freeze-dried strawberries (or substitute with 1 small box strawberry gelatin powder — ~3 oz)

  • Mix crushed cookies and strawberries with 2 tbsp melted butter until crumbly.

  • Sprinkle generously and evenly over the cheesecake layer.

  • Press down lightly with hands or spatula.


4. Chill and Cut

  • Chill in fridge for 4–6 hours (or overnight) until firm.

  • Cut into bite-sized chunks or bars with a sharp knife.

  • Wipe knife between cuts for clean edges.


🧊 Storage

  • Store in airtight container in the fridge for up to 5 days.

  • Can be frozen for up to 1 month — freeze before cutting, then thaw slightly and slice.


💡 Tips & Variations

  • Can’t find freeze-dried strawberries? Use strawberry Jell-O powder with crushed cookies for a shortcut.

  • Add a layer of fresh sliced strawberries between crust and cheesecake for extra freshness.

  • Drizzle with white chocolate for a deluxe touch.

  • Make into mini cupcake bites using a muffin pan with liners!
