Loaded Potato & Meatloaf Casserole

Here’s a full recipe for a hearty, comforting Loaded Potato & Meatloaf Casserole — layers of savory meatloaf, creamy mashed potatoes, melty cheese, and crispy toppings. It’s like meatloaf and a baked potato had the perfect baby. Ideal for feeding a hungry family or meal prepping for the week!


🥔 Loaded Potato & Meatloaf Casserole

Savory, cheesy, and fully loaded — one pan, total comfort.


✅ Ingredients (Serves 6–8)

🥩 Meatloaf Layer:

  • 1½ lbs (680g) ground beef (or half beef, half pork)

  • 1 egg

  • ½ cup breadcrumbs or crushed crackers

  • ¼ cup milk

  • ¼ cup finely chopped onion

  • 2 cloves garlic, minced

  • 1 tbsp Worcestershire sauce

  • ½ tsp salt

  • ½ tsp black pepper

  • ¼ cup ketchup (plus extra for topping)

🥔 Potato Layer:

  • 4–5 medium potatoes, peeled and chopped

  • ¼ cup butter

  • ½ cup milk (more if needed)

  • ½ cup sour cream

  • Salt & pepper, to taste

🧀 Topping:

  • 1–1½ cups shredded cheddar cheese

  • 4–6 slices bacon, cooked and crumbled

  • 2 tbsp chopped green onions or chives (optional)


🥣 Instructions

1. Preheat Oven

  • Preheat oven to 375°F (190°C).

  • Grease or spray a 9×13-inch casserole dish.


2. Make the Meatloaf Base

In a large bowl, mix together:

  • Ground beef

  • Egg

  • Breadcrumbs

  • Milk

  • Onion

  • Garlic

  • Worcestershire

  • Salt & pepper

  • Ketchup

Press mixture evenly into the bottom of your casserole dish.


3. Bake the Meatloaf Layer

  • Bake uncovered for 20–25 minutes, or until mostly cooked through.

  • While it’s baking, prepare the mashed potatoes.


4. Make Mashed Potatoes

  • Boil potatoes in salted water until fork-tender (about 12–15 minutes).

  • Drain and mash with butter, milk, and sour cream.

  • Season with salt and pepper to taste.


5. Assemble the Casserole

  • Remove meatloaf from oven.

  • Spread mashed potatoes evenly over the meat layer.

  • Top with shredded cheese and crumbled bacon.

  • (Optional) Add a swirl of ketchup or BBQ sauce on top.


6. Bake Again

  • Return to oven and bake for 15–20 minutes, until cheese is melted and bubbly.

  • Broil the top for 2–3 minutes if you want it extra golden.


7. Finish & Serve

  • Sprinkle with green onions or chives.

  • Let rest for 5–10 minutes before slicing.


🧊 Storage & Reheating

  • Fridge: Keeps 4 days in an airtight container.

  • Freezer: Freeze in portions for up to 2 months. Thaw overnight and reheat in oven or microwave.

  • Reheat: Microwave individual slices or reheat covered in oven at 350°F until hot.


🔄 Variations

  • Add frozen mixed vegetables or corn into the meat layer.

  • Use leftover mashed potatoes to save time.

  • Swap bacon for turkey bacon or omit for vegetarian-friendly topping.

  • Add ranch seasoning to the mashed potatoes for extra flavor.
