Green beans and potatoes with polish sausage

Here’s a classic, comforting recipe for Green Beans and Potatoes with Polish Sausage — a one-pot meal that’s easy, hearty, and full of flavor. It’s great for a weeknight dinner or meal prep.


✅ Ingredients

Serves 4–6

  • 1 lb (450g) Polish sausage, sliced into rounds (use kielbasa or any smoked sausage)

  • 1 lb (450g) green beans, trimmed (fresh or frozen)

  • 1½ lbs (680g) potatoes, peeled and cubed (Yukon gold or red potatoes are ideal)

  • 1 medium onion, chopped

  • 2–3 cloves garlic, minced

  • 2 tablespoons olive oil or butter

  • 1 cup chicken broth (or water with bouillon)

  • Salt and black pepper, to taste

  • Optional: Red pepper flakes, smoked paprika, or a dash of hot sauce for heat


🔪 Instructions

1. Sauté the sausage & onions

  • In a large pot or deep skillet, heat the olive oil or butter over medium heat.

  • Add the sliced sausage and chopped onions. Cook until the sausage is browned and onions are soft (about 6–8 minutes).

  • Add the minced garlic and sauté another 1 minute, until fragrant.

2. Add the potatoes

  • Stir in the cubed potatoes. Cook for 2–3 minutes to coat in the sausage drippings.

  • Season with salt, pepper, and any optional spices (like paprika or red pepper flakes).

3. Add green beans and broth

  • Pour in the chicken broth and bring to a simmer.

  • Add the green beans on top. If using fresh, cover and steam them a bit longer; if frozen, just stir them in.

4. Simmer until tender

  • Cover and cook over medium-low heat for about 20–25 minutes, or until potatoes and green beans are fork-tender.

  • Stir occasionally, adding more broth or water if it gets too dry.

5. Taste and adjust

  • Taste and adjust salt and pepper. If you like a bit of tang, add a splash of apple cider vinegar or a squeeze of lemon juice at the end.


🍽️ Serving Suggestions

  • Serve as-is in a bowl — it’s a complete meal.

  • Add crusty bread or cornbread on the side.

  • Can also be served over rice or mashed potatoes for a heartier version.


🧊 Storage

  • Refrigerate leftovers for up to 4 days in an airtight container.

  • Freezer-friendly: Store in freezer-safe containers for up to 2 months. Reheat gently with a splash of broth or water.
