  • 2 cups (250g) self-rising flour

  • 1/4 teaspoon salt

  • 1/4 teaspoon mustard powder or paprika (optional, for flavor)

  • 3 tablespoons cold butter, cubed

  • 3/4 cup (75g–100g) grated sharp cheddar cheese

  • 1/2 cup (120ml) milk, plus a bit extra for brushing

  • Optional: pinch of black pepper or chives for a savory boost

  1. Mix dry ingredients:
    In a mixing bowl, combine the flour, salt, and mustard powder/paprika (if using).

  2. Rub in butter:
    Add cold, cubed butter and rub into the flour using your fingertips until the mixture resembles coarse breadcrumbs.

  3. Add cheese:
    Stir in the grated cheese, saving a little for topping if you like.

  4. Add milk:
    Pour in the milk gradually, mixing gently until a soft dough forms. Don’t overwork it.

  5. Shape the dough:
    Turn out onto a lightly floured surface. Pat or roll to about 1-inch (2.5 cm) thick. Cut into rounds using a biscuit cutter or glass.

  6. Preheat air fryer (if your model requires it):
    Set to 350Β°F (175Β°C).

  7. Air fry:

    • Lightly grease or line the air fryer basket with parchment paper.

    • Place scones in a single layer, leaving a bit of space between them.

    • Brush tops with milk (and sprinkle more cheese if desired).

    • Air fry for 10–12 minutes, or until golden brown and puffed.

  8. Cool slightly & enjoy!
