PEPPER STEAK IN A CROCK POT

Here’s a tender, flavorful, and easy Pepper Steak in a Crock Pot recipe — packed with strips of beef, sweet bell peppers, and a savory sauce that cooks low and slow for maximum flavor. It’s great served over rice, noodles, or cauliflower rice. 🍛🌶️🥩


🥩 Crock Pot Pepper Steak

🕒 Prep Time: 15 minutes

⏱️ Cook Time: 5–6 hours on LOW or 2.5–3 hours on HIGH

🍽️ Serves: 4–6


📝 Ingredients

  • 1½ to 2 lbs beef sirloin, flank steak, or round steak, sliced into thin strips

  • 2–3 bell peppers (red, green, yellow), sliced into strips

  • 1 medium onion, sliced

  • 2 cloves garlic, minced

  • 1 (14.5 oz) can diced tomatoes, undrained

  • ¼ cup low-sodium soy sauce

  • 1 tbsp Worcestershire sauce

  • 1 tsp ground ginger (or 1 tbsp fresh grated ginger)

  • ½ tsp black pepper

  • ½ tsp crushed red pepper flakes (optional)

  • 1 tbsp cornstarch

  • 2 tbsp water

  • Optional: cooked white rice, brown rice, or cauliflower rice for serving


👩‍🍳 Instructions

🔹 1. Prep the Crock Pot

  • Add sliced beef, onion, and garlic to the slow cooker.


🔹 2. Add Sauce Ingredients

  • Pour in:

    • Diced tomatoes with juices

    • Soy sauce

    • Worcestershire sauce

    • Ginger

    • Black pepper

    • Red pepper flakes (if using)

  • Stir to combine everything well.


🔹 3. Cook

  • Cover and cook on:

    • LOW for 5–6 hours, or

    • HIGH for 2.5–3 hours

Tip: Add the bell peppers in the last hour so they stay crisp-tender. If you like them softer, add at the start.


🔹 4. Thicken the Sauce (Optional)

  • In a small bowl, mix 1 tbsp cornstarch + 2 tbsp cold water.

  • Stir into the slow cooker in the last 30 minutes of cooking.

  • Let cook uncovered for 20–30 minutes until thickened slightly.


🔹 5. Serve

  • Serve hot over steamed rice, noodles, or mashed potatoes.

  • Garnish with green onions or sesame seeds if desired.


🔁 Variations & Tips

  • Add sliced mushrooms or baby corn for variety.

  • Use coconut aminos instead of soy sauce for a lower sodium or gluten-free option.

  • Want it spicy? Add sriracha or more chili flakes to the sauce.
