Cauliflower cheese

Here’s a comforting and classic Cauliflower Cheese recipe — tender cauliflower smothered in a rich, creamy cheese sauce and baked until bubbly and golden. It’s a perfect side dish or vegetarian main. 🧀🥦


🧀 Cauliflower Cheese (Classic British Style)

🕒 Prep Time: 15 minutes

⏱️ Cook Time: 25–30 minutes

🍴 Serves: 4–6


📝 Ingredients

  • 1 large head of cauliflower, cut into florets

  • 2 tbsp butter

  • 2 tbsp all-purpose flour

  • 1½ cups milk (whole milk preferred)

  • 1 tsp Dijon mustard (optional, for depth)

  • 1½ cups grated sharp cheddar cheese (plus extra for topping)

  • Salt and pepper, to taste

  • Optional topping: breadcrumbs, parmesan, paprika, or chopped parsley


👩‍🍳 Instructions

🔹 1. Preheat & Prep

  • Preheat oven to 375°F (190°C).

  • Bring a large pot of salted water to a boil.


🔹 2. Cook the Cauliflower

  • Boil or steam cauliflower florets for 5–6 minutes, until just tender.

  • Drain well and set aside.


🔹 3. Make the Cheese Sauce

  1. In a saucepan, melt butter over medium heat.

  2. Stir in flour to make a roux. Cook for 1–2 minutes, stirring constantly.

  3. Gradually whisk in milk until smooth and thickened (about 5 minutes).

  4. Stir in mustard, then add cheddar cheese, stirring until melted.

  5. Season with salt and pepper to taste.


🔹 4. Assemble & Bake

  • Place cooked cauliflower in a baking dish.

  • Pour cheese sauce over the cauliflower.

  • Top with extra cheese, and optional breadcrumbs or paprika.


🔹 5. Bake

  • Bake for 20–25 minutes, or until golden and bubbling.


🔹 6. Serve

  • Garnish with parsley if desired. Serve hot as a side or light main.


🔁 Variations

  • Add cooked bacon or ham for a meatier version

  • Use broccoli or a mix of veggies

  • Swap cheddar for gruyère, mozzarella, or blue cheese for different flavor
