Here’s a hearty, crowd-pleasing Slow Cooker Cowboy Casserole recipe — loaded with ground beef, potatoes, beans, corn, cheese, and savory seasonings. It’s rich, comforting, and perfect for a no-fuss dinner or potluck. 🤠🍲


🐄 Slow Cooker Cowboy Casserole

⏱️ Cook Time: 6–7 hours (low) or 3–4 hours (high)

📝 Ingredients

  • 1½ lbs ground beef

  • 1 small onion, diced

  • 3–4 medium potatoes, peeled and sliced (about ¼-inch thick)

  • 1 can (15 oz) red kidney beans or pinto beans, drained and rinsed

  • 1 can (15 oz) corn, drained

  • 1 can (10 oz) diced tomatoes with green chilies (like Rotel), undrained

  • 1 cup shredded cheddar cheese (plus extra for topping)

  • 1 can (10.5 oz) cream of mushroom or cream of chicken soup

  • ½ cup milk

  • 1 tsp garlic powder

  • 1 tsp paprika

  • Salt and pepper, to taste

  • Optional: chopped parsley or green onions for garnish


👩‍🍳 Instructions

🔹 1. Brown the Beef

  • In a skillet over medium heat, cook ground beef and onion until browned.

  • Drain excess fat.


🔹 2. Mix the Sauce

  • In a bowl, stir together the soup, milk, garlic powder, paprika, salt, and pepper.


🔹 3. Layer in the Slow Cooker

  1. Lightly spray the slow cooker with non-stick spray.

  2. Layer the ingredients like this:

    • Half of the sliced potatoes

    • Half of the ground beef mixture

    • Half of the beans, corn, and tomatoes

    • Half of the cheese

    • Drizzle with half of the soup mixture

  3. Repeat the layers with the remaining ingredients.


🔹 4. Cook

  • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are tender.


🔹 5. Add Final Cheese

  • In the last 10–15 minutes, sprinkle more shredded cheese on top, cover, and let it melt.


🔹 6. Serve

  • Garnish with chopped parsley or green onions if desired.

  • Serve hot, with crusty bread or cornbread on the side.


🔁 Optional Add-ins

  • Bacon bits for a smoky twist

  • Green chilies or jalapeños for extra heat

  • Swap potatoes for tater tots or frozen hash browns (adjust cook time)
