📝 Ingredients

  • 3 cups zucchini, thinly sliced (about 2 medium zucchini)

  • 1 small onion, finely chopped

  • 1 cup shredded cheddar cheese (or a mix of cheddar & mozzarella)

  • ½ cup grated Parmesan cheese

  • ¾ cup Bisquick baking mix

  • 4 large eggs

  • ¼ cup vegetable oil or melted butter

  • ½ tsp salt

  • ¼ tsp black pepper

  • ½ tsp dried oregano or Italian seasoning

  • Optional: Fresh herbs (like basil or parsley) for garnish


👩‍🍳 Instructions

1. Preheat Oven

  • Preheat your oven to 350°F (175°C).

  • Lightly grease a 9-inch pie dish or similar baking pan.

2. Prep Zucchini

  • Thinly slice the zucchini (a mandoline works great).

  • Pat dry with paper towels if overly moist — this prevents sogginess.

3. Mix the Batter

In a large mixing bowl:

  • Beat together the eggs, Bisquick, oil, salt, pepper, and herbs until smooth.

4. Assemble

  • Stir in the zucchini, onion, and both cheeses.

  • Pour the mixture into the prepared pie dish and spread evenly.

5. Bake

  • Bake for 35–40 minutes, or until the top is golden and a knife inserted in the center comes out clean.

6. Cool Slightly & Serve

  • Let rest for 5–10 minutes before slicing.

  • Garnish with fresh herbs, if desired.
