π So Easy Egg Fried Rice
Ingredients (Serves 2β3)

2 cups cooked rice (preferably day-old and cold)

2 eggs, beaten

2 tbsp oil (vegetable, sesame, or canola)

2 cloves garlic, minced (optional)

2β3 green onions, chopped
-
1/2 cup frozen peas and carrots (or any veggies you like)

2β3 tbsp soy sauce (to taste)

1 tsp sesame oil (optional)

Salt & pepper to taste
πͺ Instructions
1. Prep the Rice

If using freshly cooked rice, spread it out on a tray to cool and dry slightly.

Cold, leftover rice works best for fried rice β it doesnβt clump.
2. Scramble the Eggs

Heat 1 tbsp oil in a large skillet or wok over medium-high heat.

Pour in the beaten eggs. Scramble gently until just cooked.

Remove eggs from the pan and set aside.
3. SautΓ© Veggies

In the same pan, add another tbsp of oil.

Add garlic (if using) and sautΓ© for 15β30 seconds.

Add peas and carrots, cook for 1β2 minutes until tender.
4. Add Rice & Sauce

Add the cold rice to the pan, breaking up any clumps with a spatula.

Pour in soy sauce and a dash of sesame oil.

Stir-fry everything together until rice is heated through and lightly toasted.
5. Add Eggs & Green Onions

Stir in the scrambled eggs and chopped green onions.

Season with salt and pepper to taste.
