Ingredients:

1 tbsp butter or olive oil

2 cloves garlic, minced

1 small onion, finely chopped (optional)

10–12 oz fresh spinach (or 1 package frozen spinach, thawed and drained)

1/2 cup heavy cream or whole milk

1 cup shredded mozzarella (or a mix of cheddar and mozzarella)

1/4 cup grated Parmesan

Salt and pepper to taste

A pinch of red chili flakes or nutmeg (optional)
Instructions:

Prep the spinach

If using fresh spinach, sauté it in a pan with a bit of olive oil until wilted. Drain any excess liquid.

If using frozen spinach, thaw and squeeze out as much moisture as possible.
